I was listening to the radio today, and "Bring the Rain," by MercyMe came on, and I was thinking how appropriate those lyrics were for the crazy rainy weather we have been having the past few days!! The Lord has been showing his "love like a hurricane" for me!! (OK, I know that is a different song, but I am in a rainy day mood, and all the songs about weather and love are just coming into my head all at once!!) I have just been so blessed this past week!! Despite the rainy times in our lives, it is so important to still give the glory to God, and recognize the wonderful ways He shows us His love for us. We have gotten our bible study going at Crossfit Dahlonega, and I just know the Lord has been working in my life in so many ways. I can't wait to see His work in the gym too!
In other news, my mom has been sending me postcards every day, and I have just felt SO much love from her; she knows I have been needing a little extra "hug" everyday, and her cards make my day!! I love going to the mailbox every afternoon, and I am hanging all the postcards up on my fridge to remind me how lucky I am to have such a wonderful lady in my life!! :)
Today I tried a new paleo recipe using my friend Haley Hobson (from Crossfit Addiction)'s homemade pesto recipe!!
I started out cooking my chicken tenderloins on the stove in olive oil and I sprinkled some Italian seasonings on them while they cooked.
Then I made Haley's pesto in my food processor.
- 1 cup fresh basil leaves
- 1/3 cup extra virgin olive oil
- 1/4 cup pine nuts
- 2 garlic cloves, minced
- salt and freshly ground black pepper to taste
- optional: 1/4 cup freshly grated parmesan or romano cheese
I added some fresh veggies to my chicken, and drizzled the pesto on top!! YUM-O!! Can I just say it was to die for :) Yeah Haley!!
